If you’re looking for a quick, delicious snack that is packed with flavor…this is it. Summer is coming to a close, which means I have a lot of bananas that need to be used. Slice some up and sandwich in between peanut butter and chocolate. Then freeze. You won’t be disappointed with these frozen chocolate banana poppers!
- 2 ripe bananas
- 1-2 cups peanut butter
- 2-3 cups milk chocolate chips
- Mini muffin pan
Place peanut butter in a microwavable bowl and melt in the microwave. It only takes about 30 seconds. Spray the mini muffin pan with non-stick spray. Spoon melted peanut butter evenly into each muffin cup.
Melt the chocolate chips in a bowl for one minute, stirring at 30 seconds. Spoon on top of the banana slices. Put the pan into the freezer to chill for about an hour or two. Then remove with a small spoon and enjoy! The chocolate is a nice crunch while the peanut butter smothers the fresh banana, giving your mouth the best of all worlds. Another option would be to also add chocolate or a graham cracker to the bottom before the peanut butter, which might help keep the poppers in better shape visually. But what these lack in appeal, they sure make up for it in taste!
