Easy & Delicious Pumpkin Pie Pecan Bars

There are so many fall flavors I love baking with, and I love them even more when I find ways to combine my favorites together. I love fall desserts, specifically pumpkin desserts. I had it in my mind to do something pumpkin spice, but then I came up with a way to make it even better.

So today I am sharing the perfect synergistic dessert bar recipe of two fall favorites, pumpkin cookies and pecan pie!

Making Pecan Bars

Combining these two delicious treats results in a the most incredible pumpkin pecan bars, a new staple in my autumn baking rotation.

These pecan squares are dense and gooey, with the perfect combination of crunchy, toasted pecans, and pumpkin.

These taste just like classic pecan squares, with a bit of fall pumpkin infusion. I have a secret that I use that 1) gives these bars their pumpkin flavor and 2) makes the crust quick and easy to assemble. My secret is pumpkin cookie mix.

By using a cookie mix, you’ll only need two ingredients to make the crust – the mix and some butter. As a result, these take no time to throw together . . . but taste like you baked all day. You will be obsessed.

Fridge or Frozen?

These pecan squares can be left to cool, and then left at room temperature if they are going to be consumed within a few hours.

If you’re planning on waiting longer, they’ll last in the fridge for about three – four days. That should give you more than enough time to eat them!

If you want to freeze these bars, you can do that for up to three months. Just wait until they are completely cooled, then you can wrap them and place them in the freezer.

Ingredients

For the pumpkin crust

  • 2 tbsp butter
  • 1 egg
  • 1 tsp vanilla
  • 1/3 c light corn syrup
  • 1/4 c brown sugar
  • 1 c chopped pecans

Pumpkin Pecan Bars

Total Time 35 minutes

Ingredients

For the Pumpkin Crust

  • 17.5 oz cookie mix, (I used Pillsbury Perfectly Pumpkin)
  • 1/2 cup butter

For the Pecan Pie Topping

  • 2 T butter
  • 1 egg(s)
  • 1 teaspoon vanilla extract
  • 1/3 cup light corn syrup
  • 1/4 cup brown sugar
  • 1 cup chopped pecans

Instructions

  1. Heat oven to 350 degrees. Coat small baking pan (like an 8×8 or 9×7) with non-stick spray.
  2. Stir cookie mix and 1/2 c butter in large bowl with fork until evenly moistened. Press evenly into bottom of pan to form a crust. Bake 10 minutes.
  3. Whisk egg in medium bowl. Whisk in corn syrup, 2 tbsp butter, brown sugar and vanilla until blended. Stir in pecans. Spread over baked crust.
  4. Bake 23 to 25 minutes or until topping is set and golden brown. Cool completely in pan on wire rack.
