This cauliflower “fried rice” recipe has become one of my go-to dinner dishes! AND – it can absolutely be made in less than 10-minutes! I usually make it in just over 5 when I already have the cauliflower rice ready. It’s pretty awesome. Sometimes I add chicken (which admittedly will take it a little over 10 min) but not always. Whatever I do, I always enjoy this recipe. It’s tasty, good for you, and easy to make.
- One head of cauliflower (OR frozen . . Trader Joes has it!)
- One Tablespoon coconut oil
- 1 bag frozen peas and carrots
- 3 Tablespoons soy sauce
- 3 eggs
- Green onions (optional)
- Chicken (optional)
