I have such an obsession with baking brownies and have searched for years to find the perfect chocolatey brownie recipe to be my go-to when the urge to bake hits me.

In the midst of this search I never considered trying a blondie recipe because it seemed nothing could compete with the full-chocolate variety.

One Sunday I needed brownies desperately but was out of cocoa, the key ingredient to my favorite recipe.

So, in an attempt to take the edge off my brownie fix I decided to try blondie brownies – and I am SO glad I did.

What are Blondies?

It’s really just a play on words. Brownies are obviously brown in color, but blonde brownies don’t have any cocoa powder – so they are a different color.

I’d like to think someone named these after Debbie Harry’s alter ego because they were her favorite dessert, but that’s not the case (but feel free to tell people that’s how they got their name – I won’t say anything!).

Tips for Making

It’s easier to mess up this blonde brownie recipe than you think. Let me give you some simple tricks for producing the dessert bars of your dreams:

Use room temperature eggs.

Cold eggs don’t mix as easily and can cause your blondies to be too dense. Keep the eggs room temp for the perfect consistency.

Don’t overmix when adding dry ingredients.

You want to fold an ingredient into the batter until it’s just combined (and you can’t see it) as opposed to beating it to death. Overmixing will cause blonde brownies that are too dense/will rise and then fall in the oven.

Know your bakeware and oven.

Metal pans cook things faster, glass more slowly. That coupled with the fact that every oven is different means you need to check your blonde brownies about five minutes before they’re supposed to be done.

This blondie recipe has changed the game. These blondies have all of the things that make a brownie recipe great: 1) the ingredients are super basic and you will likely always have them on hand; 2) they are outrageously delicious, gooey, chewy, and dense; 3) they are infinitely adaptable.

All you have to do is follow the base blonde brownie recipe and then toss in whatever you’ve got in your pantry in order to make them special.

Hence, I call them Chameleon Blondies (in addition to other names) because they can change with your whims. You’re going to LOVE them.

Ingredients

  • 1 cup all-purpose flour
  • 8 tablespoons (1 stick) butter, melted
  • 1 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla
  • 1/2 cup sliced almonds
  • 3/4 cup chocolate chips
  • 3/4 cup butterscotch chips
  • 1/2 cup coconut flakes
  • pinch of salt

As far as further additions to your blonde brownies, use one (or a combination) of the following or whatever or deliciousness you can think of. It’s a good time to raid your cabinets! Here are some suggestions:

  • Add any nuts including walnuts, pecans, macadamias
  • Replace peanut butter chips for butterscotch chips
  • Use 1/2 teaspoon mint extract in addition to or in place of the vanilla
  • Add 1/2 cup mashed bananas
  • Stir in 1/2 cup dried fruit, especially dried cherries, into the prepared batter
  • Top with a vanilla butter cream or chocolate peanut butter cream frosting

I love how versatile these blondies are. As long as you have a few basic ingredients, everything else you add is up to how you are feeling that day. Don’t you wish everything else in your life was so flexible?

Ingredients

  • 1 cup all-purpose flour
  • 8 T butter (1 stick, melted)
  • 1 cup brown sugar
  • 1 large egg(s)
  • 1 teaspoon vanilla extract
  • 1/2 cup sliced almonds
  • 3/4 cup chocolate chips
  • 3/4 cup butterscotch chips
  • 1/2 cup coconut flakes
  • 1 pinch salt

Instructions

  1. Preheat oven to 350°F. Butter or spray an 8 × 8 (or similar) pan.
  2. Mix melted butter with brown sugar; beat until smooth. Beat in the egg and vanilla until just mixed.
  3. Add salt. Stir in flour until just combined.
  4. Mix in any additions. I used almonds, the chips listed in the ingredients, and coconut.
  5. Pour into prepared pan. Bake 20 - 25 minutes, or until set in the middle. 
  6. Cool pan on a rack before cutting into your blondies.

Your tasty recipe calls for oil as an ingredient but the directions say to mix in the melted butter... Which should it be?

Oh my goodness, I've got to make these! Of course, it would be in the 90s today so i'll have to wait until the weather cools down a bit. :) (we don't have ac!) But i'm definitely pinning these--they would make such a fun gift, too. thanks for sharing. :)
