Here’s a secret: I’ve been known to dry out a red meat on an occasion or two. Truth be told. Okay, I wasn’t the best with chicken either, but as time went on, things changed. As for my rib issues . . . I had them until I developed this recipe.

I will show you how to make ribs so they are juicy and amazingly delicious. I dare you to say these aren’t the best ribs you’ve ever had!

Pork ribs in the summertime is like hot cocoa in the winter. It’s a necessity. But how do you cook them without: a) drying them out too much b) undercooking them or c) making them in a timely manner? I desperately wanted a recipe to help answer all three and couldn’t find just one.

So I took what I learned from a few different recipes, added my own twist (as I do), and came up with the best solution to juicy, tasty ribs right from your own oven!

While some recipes called for just a rub and others just a sauce, this one uses both.

The savory spices and fresh herbs mixed with a tangy sauce can’t be beat. We have a container garden so I just snipped my own herbs and dried them out for this.

As for the meat, I bought a nice slab of pork spare ribs. If you are wondering how to make ribs so they aren’t dry, here’s what I did.

How to Make Ribs

For the Rub:

  • 2 tbsp A1 Garlic & Herb Dry Rub
  • 1 tsp paprika
  • 1 tsp basil
  • 1 tsp oregano
  • 1 tsp parsley
  •  Pinch salt and pepper

For the Sauce:

  • 1/4 cup BBQ sauce
  • 1/4 cup ketchup
  • 1 tbsp honey mustard

Unwrap the slab and pat it with dry paper towels. Lay it on a large cookie sheet. Take the rub and massage it with your fingers all over the slab.

Make sure you do both sides. Use all of the rub, pressing down on the meat and equally distributing the herbs.

Then lather with the sauce on both sides. Cover with foil and let the good stuff marinade in the refrigerator for about 1-2 hours. If you have time, overnight makes them even juicier, but this is perfect for those in a time crunch.

Preheat the oven at 350 degrees and take the slab out of the fridge. Place foil over a large cookie sheet and spray with non-stick spray.

Set a cooling rack in between the slab and the bottom of the pan. This will create a nice flow for the heat to cook everything perfectly.

Cover the entire thing with foil leaving the two ends open like a little pocket. Cook for about 2 hours, occasionally checking with a fork.

Press the fork into the hearty pieces of meat and if the juices run clear, it’s good to go.

Turn the broiler on low and place the slab without the foil about 5 inches from the burners. Crisp the meat for about 10 minutes.

In order to keep the meat moist, take the ribs out of the oven and set it on the counter, allowing it to sit for about 10 minutes before cutting into it. You can take some of the juices/sauce in the pan and rub back over the ribs as well.

When ready, slice into manageable pieces and enjoy! We paired ours with two other summer favorites: yummy corn on the cob and mac and cheese.

Ingredients

  • 2 lb slab of ribs

For the Rub

  • 2 T A1 Garlic & Herb Dry Rub
  • 1 tsp paprika
  • 1 tsp basil
  • 1 tsp oregano
  • 1 tsp parsley
  • 1 pinch salt and freshly ground black pepper to taste

For the Sauce

  • 1/4 cup BBQ sauce
  • 1/4 cup ketchup
  • 1 T honey mustard

Instructions

  1. Preheat the oven to 350F.
  2. Unwrap the slab and pat it with dry paper towels. Lay it on a large cookie sheet.
  3. Mix all of the dry ingredients for the rub together.
  4. Take the rub and massage it with your fingers all over the slab. Make sure you do both sides.
  5. Use all of the rub, pressing down on the meat and try to equally distribute the herbs.
  6. Mix the wet ingredients together for the sauce - the lather on both sides of the slab.
  7. Cover with foil and let the good stuff marinade in the refrigerator for about 1-2 hours. Overnight would bring a much better taste but this way worked very well.
  8. Take the slab out of the fridge.
  9. Place foil over a large cookie sheet and spray with non-stick spray. Set a cooling rack in between the slab and the bottom of the pan. This will create a nice flow for the heat to cook everything perfectly.
