Easiest Sweet Rolls Recipe with Mixed Berry

Easy and delicious! This sweet rolls recipe is a “berry good” alternative to the traditional cinnamon roll. Add mixed fruit jam to these sweet yeast rolls to make them extra yummy! Perfect for breakfast or dessert.

I usually stick with “semi-homemade” recipes because I have a big family, so time and effort is a concern.

Honestly it is rare for me to make something completely from scratch. But around the holidays I get cravings for all the homemade baked goods.

That’s where these sweet yeast rolls come in. They are exactly like cinnamon rolls . . . but with berry jam! What I love about these is that while I enjoyed them for the holidays, the berry jam and sweetness makes them the perfect summer dessert. So really, you can eat them any time of year!

I made these mixed berry sweet rolls recipe over Thanksgiving weekend to share with my family and they were so delicious, completely homemade, and really simple.

If you’ve never made sweet yeast rolls before, they are very easy. You need to factor some rise time in for the dough, but otherwise they are very simple.

They are truly my favorite fruit dessert that also works as a breakfast treat.

Tips for Sweet Yeast Rolls

These sweet yeast rolls are basically berry cinnamon rolls, so some of the same tips for cinnamon rolls apply here. Here are some tips for success:

  1. Make sure all butter is very soft but not melted. Take the butter out of the fridge a few hours before you want to make this sweet roll recipe. It will incorporate easily into the dough and you won’t overmix.
  2. Save time by mixing the dough the day before and letting it rise overnight in the fridge. It’s the perfect way to shave a few hours off the process while you are sleeping. And honestly, cold dough is easier to work with. Tip: you can freeze these rolls at any point during the process, just make sure that they get their time to rise. You can also freeze them after they are done!
  3. Roll the dough tight but not too tight. You want it to be easy to cut when it’s in a roll, but you don’t want it to be so tight that it doesn’t bake properly. If you find the dough is loose and isn’t cutting properly, stick it in the fridge for 15 minutes.
  4. Don’t pack the rolls together in the pan. If you find that your pan is too small, get a second pan. You want to give the rolls a place to expand.
  5. Do NOT overbake! I can’t stand crunchy cinnamon rolls. I like them soft. Check them five minutes before baking time is done to make sure they aren’t overbaked.

Type of Jam

You can use any jam you like for this sweet roll recipe, whether it be store bought or homemade. My favorites are strawberry and raspberry, or a mix of the two.

Versatile Dough

The roll itself is light and fluffy and so tasty. It is easy to whip up, and only takes time because it has to rise.

It uses ingredients I already had on hand and is the perfect versatile recipe that can be used for dinner rolls or bread sticks too!

I used some homemade mixed berry jam, and I think one of the best parts of this recipe is that it could be used with any kind of jam and that makes the possibilities basically endless!

Here’s what you’ll need:

Filling

  • 3/4 cup berry preserves
  • 1/4 cup softened butter or margarine

Rolls

  • 3 1/4 cup white flour
  • 1/4 cup sugar
  • 1 cup warm water
  • 3 teaspoons yeast
  • 2 T softened butter or margarine
  • 1 egg
  • 1 teaspoon salt

Cream Cheese Frosting

  • 1/2 cup softened butter or margarine
  • 2 ounces softened cream cheese
  • 1/2 teaspoon vanilla
  • 3 cups powdered sugar
  • 5 T milk
  • 1 teaspoon berry preserves

Ingredients

Mixed Berry Filling

  • 3/4 cup berry preserves
  • 1/4 cup butter (softened)

Rolls

  • 3 1/4 cup all-purpose flour
  • 1/4 cup sugar
  • 1 cup water (warm)
  • 3 teaspoons yeast
  • 2 T butter (softened)
  • 1 egg(s)
  • teaspoon salt

Cream Cheese Frosting

  • 1/2 cup butter (softened)
  • 2 ounces cream cheese (softened)
  • 1/2 teaspoon vanilla extract
  • 3 cups confectioners sugar
  • 5 T milk
  • 1 teaspoon berry preserves

Instructions

  1. In a large bowl, combine the flour, sugar, salt, and yeast.Flour-yeast-and-salt
  2. In a small bowl, add the water and butter. Microwave until the butter is melted (about 30-45 seconds).Melted-butter-in-a-microwave-safe-dish

  4. Add the egg and either knead by hand or mix on low using dough hook for about 5 minutes (or until it is no longer sticky).Mixing-dough-with-a-dough-hook
  5. Turn dough out on lightly floured surface and knead 2 - 3 times. Pat into a ball shape and cover with a towel to rise for 1 - 1.5 hours.Kneaded dough on a floured surface
  6. Preheat oven to 350F. Roll dough on floured surface to a 12 x 18 rectangle.Rolling-the-dough-out-on-a-surface
  7. Mix the filling ingredients (the preserves and butter) together and spread across the dough.Jam filling spread across the dough
  8. Roll into a log and divide into twelve rolls for a 9 x 13 pan.Cutting a roll off the dough log
  9. Place rolls in greased pan and let rise another 20 - 30 minutes. Bake for 20 - 25 minutes, until slightly golden. Remove from the oven and let cool for 15 minutes.

The milk for the dough I mean, not the frosting. The step mentions microwaving the water, milk and butter but I don’t see how much milk to add
