With a busy schedule, it can be hard to make a decent, easy dinner with healthy ingredients. Sometimes I grab a salad, and while I like salads . . . sometimes I want something a bit different.
I’m always fighting the urge to just stick a bunch of frozen chicken into the toaster oven and open a bag of chips. I know, I know.
This quesadilla recipe is packed with flavor and (with the added veggies) nutrients. Savory prosciutto, juicy tomatoes, crunchy kale, and cheesy mozzarella on top of garlic butter.
Yeah, you’ll want to make this tonight.
Mozzarella Quesadilla Recipe
Ingredients
- 1 soft tortilla
- 4 tbsp soft butter
- 1/4 tsp garlic salt
- 1/4 tsp garlic powder
- 1/4 tsp dried basil
- 1 tomato, sliced
- 1/2 cup shredded mozzarella
- thinly sliced prosciutto
- handful of kale
Directions
Start with the soft butter in a dish. Add the garlic salt, garlic powder and the dried basil. Using a large spoon, mix well.
Place the soft tortilla down and spread a spoonful of butter on it. Focusing on half the tortilla, sprinkle the mozzarella cheese down. Add the sliced tomato, prosciutto and the kale.
Fold the tortilla in half and place in a pan. Sear on both sides until the tortilla is light brown. Remove from heat, cut and serve. Totally delicious and healthier than some other options you might choose!

- 2 oz prosciutto, (thinly sliced)
- 2/3 cup kale, (about one handful)
Instructions
