With a busy schedule, it can be hard to make a decent, easy dinner with healthy ingredients.

I’m always fighting the urge to just stick a bunch of frozen chicken into the toaster oven and open a bag of chips.

This quesadilla recipe is packed with flavor and (with the added veggies) nutrients. Savory prosciutto, juicy tomatoes, crunchy kale and cheesy mozzarella on top of garlic butter.

Yeah, you’ll want to make this tonight.

Place the soft tortilla down and spread a spoonful of butter on it. Focusing on half the tortilla, sprinkle the mozzarella cheese down. Add the sliced tomato, prosciutto and the kale.

Fold the tortilla in half and place in a pan. Sear on both sides until the tortilla is light brown. Remove from heat, cut and serve. Totally delicious and healthier than some other options you might choose!
