Ingredients

  • 3 large zucchini
  • 1 lb lean ground turkey
  • 2 ears corn
  • 1 oz taco seasoning (1 packet)
  • 1 1/2 cups shredded cheddar cheese
  • 1-2 cups romaine lettuce (chopped)
  • 1 T cilantro (chopped)
  • 1 tomato (diced)
  • 1/4 red onion (diced)
  • 1/2 jalapeño (sliced or chopped)
  • 2 T sour cream

Instructions

  • Brown the turkey with taco seasoning until completely cooked. Use ½ a package or whole depending on the amount of flavor you want.
  • Slice the zucchini into 1/4 - 1/2 inch thick rounds.
  • Place half on a baking sheet and top with half the turkey and half the cheese.
  • Layer the rest of the zucchini, turkey and cheese.
  • Peel the corn and cut the corn off the cob.
  • Spread corn over the top of the last layer of cheese.
  • Bake at 400ºF for 10 - 15 minutes or until the cheese is melted and the zucchini have started to soften (you want them to be soft, but still crunchy).
  • Remove from oven and top with lettuce, tomato, cilantro, jalapeño slices and sour cream.
