Take a wet paper towel and run it along the rim of the champagne glass. Take the cinnamon-sugar mix in a shallow plate and turn the rim of the glass on it till the cinnamon sugar coats it. Repeat with the other glass.
Pour 1/3 of a cup of apple cider in each glass.
Pour the sparkling wine into the champagne flutes, dividing the bottle between all six glasses.
Add a pinch of cinnamon to the top of each glass if desired and serve.
