Chocolate Chip Zucchini Bread with Walnuts

Zucchini season is still upon us, and you’re probably wondering what to do with the extra zucchini that’s taking over your garden.

Ingredients

– Shredded zucchini (please measure a generous cup)

– Flour – brown sugar -Baking soda

1. Preheat oven to 325°F. Grease a loaf pan or line with parchment paper.

2. In a large bowl, combine flour, baking soda, baking powder, brown sugar, and salt.

3. In another bowl, mix together zucchini, eggs, oil, applesauce, and vanilla. Be sure it’s mixed well.

4. Add the wet ingredients to the dry, mixing just until everything is well combined. Don’t keep stirring.
