As the summer comes to an end and the fall is right around the corner, one of our favorite desserts is nice warm zucchini bread.

I love making this fresh at home because trying to feed a toddler veggies can be a challenge. Slicing and serving a yummy piece of this zucchini bread recipe, it’s gone in just a few minutes.

I found this recipe but of course altered it with what I know and what I had on hand. It still came out with a perfect crust on the outside and moist cake in the inside.

Here’s what you’ll need:

  • 2 cups grated zucchini
  • 2 1/2 cups sugar
  • 3 cups flour
  • 3 eggs
  • 1 teaspoon salt
  • 1 cup corn oil
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1 tablespoon vanilla

Preheat the oven to 350 degrees. Take the zucchini and grate into a small bowl. Set aside. In a medium bowl, mix eggs, oil and vanilla. In another medium bowl, mix together all the dry ingredients.

The original recipe said to sift them, but I didn’t and it still came out great. Sometimes I break the rules of baking, it’s true 😮 Slowly add the dry mixture into the egg mixture.

Add the grated zucchini and mix well. Grease a large loaf pan or two medium loaf pans. I had enough to make two.

Pour in the batter and bake for an hour. Insert a toothpick to check the middle. If it comes out clean, it’s ready!

Allow to cool in the pan for about five minutes before cutting and serving. We had this as a snack the entire day and then for dinner I prepared a simple pasta dish to compliment the bread.

We love warming it up with a dab of cream cheese. This is the perfect way to sneak in veggies to your children while also making it taste amazing. It also makes a great gift!

I wrapped the second loaf and gave it to my in-laws who were feeling under the weather. I’ll be making more this holiday season for sure.
