Nothing is more refreshing during summer than a chilled beverage – like this delicious vanilla caramel iced coffee recipe. So easy to make!
Here in New England the weather pretty much skipped over spring head first into summer. We’ve already had a few days above 80 degrees and I’ve been downing liquids like crazy.
There’s nothing like an ice cold glass of water, but sometimes it’s refreshing to make yourself a chilled coffee beverage.
This iced coffee recipe is so easy to put together, super yummy, and you don’t have to worry about spending money like you would at Starbucks or Dunkin’ Donuts. Plus the recipe makes plenty for free refills.
How to Make Caramel Iced Coffee
Ingredients
- 4 cups of regular or decaf coffee, brewed and at room temperature
- 1/2 cup of french vanilla creamer (or your favorite flavored creamer)
- 1 cup of half & half or milk
- 2 teaspoons baking cocoa
- 1/2 cup caramel bits
- 1 tray of ice cubes
Directions
In a small saucepan, add all the ingredients except the coffee and ice. Bring to a simmer and stir frequently, allowing the caramel to melt.
Keep stirring often so the caramel doesn’t stick to the bottom of the pan. Keep simmering until all ingredients are well blended. The baking cocoa may settle as small dark flecks and that’s totally okay. Set aside to cool.
Combine the coffee and the caramel cocoa mixture into the blender. Add the ice. You might have to add more depending on how thick you want the drink to be. I just wanted mine chilled so one tray was plenty. Blend until smooth.
Now get our your tallest glass, pour and enjoy! This iced coffee recipe was amazing, especially drinking it outside with the sun shining.
I didn’t need to add any sugar because the caramel and french vanilla creamer was enough. You could always top the glasses off with whipped cream and a swirl of chocolate syrup. Hello summer, I’m ready!
