No need to visit the local Mexican restaurant – make a delicious burrito bowl recipe in your own home. So yummy and so filling!

Taco nights are a must in our house. At least twice a week I create something taco-inspired. So when I spotted this recipe using only one pan to create a burrito meal, I knew I needed to make something similar! This rice and chicken burrito bowl is a perfect quick dinner recipe.
I altered the recipe according to what I already had on hand and what we like (or don’t like.) Hearty and healthy . . . the best combo! Here’s how I made this delicious burrito bowl recipe.

Cheesy Chicken Burrito Bowl Recipe
You’ll need:
- 1 tbsp olive oil
- 1 green pepper, chopped
- 1 can diced tomatoes, drained
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- 1 cup black beans, drained
- 1 cup cooked chicken, chopped
- 2 cups cooked white rice
- 1 cup shredded Mexican Style cheese

In a large pan, heat up the olive oil on medium. Sauté the green peppers for about 2 minutes and add the cumin and garlic powder. Add a dash of salt and pepper to taste.
Pour the can of tomatoes into the pan along with the black beans and mix. Allow to simmer for about 5 minutes.

Add in the chicken and the rice. Stir until well mixed. Cook together for about 3-5 minutes.

With the back of a wooden spoon or spatula, smooth out the burrito mix into the warm pan. Sprinkle the shredded cheese and cover.
Turn off the heat and allow the cheese to melt completely before removing the pan from the stovetop. Uncover and allow to cool for about two minutes. Scoop, serve and enjoy!

Savory and creamy, this is a quick dinner that doesn’t sacrifice flavor. Would be great with crushed tortilla chips on top and a dollop of sour cream and guacamole!
Or warm up some flour tortillas and use this as the yummy filling. You can also leave out the chicken and make it vegetarian!
