How do you eat your cottage cheese? The reason I ask is because I’ve always eaten my cottage cheese the same way since I was little: sprinkled with Johnny’s Seasoning Salt.
It was such a thing in fact that when I moved as an adult and didn’t have access to Johnny’s, I requested that friends ship me the product. Yes. I take my cottage cheese very seriously.
It actually wasn’t until I became an adult that I realized how many people do different (potentially strange?) things with their cottage cheese. Some people add fruit! They also add jam or maple syrup.
What really intrigues me is the savory additions like potato chips, crumbled bacon, or vegetables. What??? There’s a whole new world I have yet to discover.
Which brings me to this cottage cheese omelette recipe!
“Cottage cheese in an omelette?” you might be saying this to yourself as you read this. But I promise it tastes delicious! The reason for this specific healthy omelette recipe is because I’m used to cheese in my breakfast foods.
But it’s usually cheddar, smoked gouda, or something along those lines. I wanted to give cottage cheese to 1) make my typical breakfast a little healthier and 2) see what it tasted like.
And it turned out really good.
This recipe includes turmeric, which has anti-inflammatory effects and is a very strong antioxidant. Add the spinach and you’ve got a power breakfast that is healthy and will make you feel great!
FYI: you can use cottage cheese or ricotta cheese. Ricotta is a little less chunky, which is important to some people who are texture sensitive (especially when it comes to breakfast).

Healthy Omelette with Spinach and Cottage Cheese
Serving Size: 1 omelette
Ingredients
- Eggs – 2
- Fresh spinach – 2 cups (chop if you like)
- Garlic clove – 1
- Turmeric – 1 large pinch
- Cottage cheese or ricotta cheese – 3T (as much liquid drained as possible)
- Coconut oil – 1 tsp + 1 tsp
- Salt and freshly cracked black pepper to taste
- Sliced cherry tomatoes (optional)
Directions
Before beginning, use a cheesecloth or paper towels to remove as much moisture from the cottage or ricotta cheese as possible.
Grab a cutting board and knife and slice the garlic clove into thinner slices. Or the size of your choice. Set aside.
In a bowl, whisk the two eggs with the turmeric and salt and pepper. Heat a medium pan to medium high heat and melt 1 teaspoon of coconut oil in the pan. Fry the garlic slices for 30 seconds.
Add the spinach leaves and season with salt and pepper. Cook until the spinach wilts. Transfer to a bowl.
At this point you can strain some of the liquid out of the wilted spinach if you like. Spinach releases water as it cooks, and I personally don’t like my greens to be too “wet.”
In the same pan, add the remaining 1 teaspoon of coconut oil and swirl to coat. Pour the whisked egg into the pan and cook until it sets.
On one half of the egg, spread the cooked spinach. Top with the ricotta cheese. Season with salt and pepper.
Carefully flip the other side over on top of the greens and cheese. Slide the omelette off onto a plate and serve immediately. Cut up some tomatoes onto your breakfast and add some hot sauce if you are feeling spicy!

- 2 Eggs

- 2 teaspoons Coconut oil
- 1 pinch Turmeric

- salt and freshly ground black pepper to taste
Instructions
