Cucumber Chicken Salad Sandwich Recipe

Although summer time consists on chowing down grilled hamburgers and hot dogs, it’s always nice to have a healthy alternative especially when the weather is warm and you’re craving a cooler meal.

A nice sandwich with a refreshing crunch, but savory at the same time.

I found myself with more cucumbers than normal and I knew they had to be used soon. That’s when this chicken salad sandwich recipe was born.

I made a few mini sandwiches for some friends and we all thought they were delicious!

Chicken Cucumber Salad Sandwich

Here’s what you’ll need:

  • Half cucumber or more, depending on how much you want to make.
  • 1 cup shredded chicken
  • 2 tbsp of mayo
  • Pinch of salt and pepper

Wash and dry the cucumber. Dice into small pieces and place in a small to medium size bowl.

Add the shredded chicken and mayo. Mix well with a spoon and add the salt and pepper.

Good food doesn’t have to be complicated. Add a couple of scoops of the chicken cucumber salad to a nice roll with your favorite summer side dish.

You can even spread in a tortilla, roll it up tightly and slice sandwich pinwheels.

The fresh crunch of the cucumber tastes amazing with the smooth and flavorful chicken.

Throw in your favorite veggies to change things up or add peppers and taco chicken to spice things up.

Ingredients

  • 1/2 cucumber
