You spend about five minutes mixing theย ingredientsย the night before, pop everything into aย jar, and wake up to breakfast waiting for you in theย fridge. It’s basically a gift from your past self.
And theย flavor? Think oatmeal cookie meets peanut butter cup.
The combination of peanut butter,ย vanilla,ย rolled oats, andย chocolate chipsย creates a rich, satisfying breakfast that tastes like a treat while still delivering plenty ofย proteinย and complexย carbs. Myย kidsย love these as much as I do, which is always a win in my house.

One of my favorite things about thisย overnight oats recipeย is how easy it is to customize. You can useย almond milk,ย whole milk, orย coconut milk. Preferย honeyย over anotherย sweetener? Go for it. Want to addย bananas,ย chia seeds, or even swap inย almond butterย instead of peanut butter? It all works.
Whether you’re meal prepping breakfasts for the week or just trying to make yourย next morningย a little less chaotic, theseย peanut butter chocolate chip overnight oatsย are one recipe you’ll find yourself making again and again.

You’ll need:
- Old-fashioned oatsย orย rolled oats

Ingredientย Notes
The Best Oats forย Overnight Oatmeal
For the best texture, I recommendย old-fashioned oatsย orย rolled oats (Bob’s Red Mill is great). They soften beautifully overnight without turning mushy.
I don’t recommend instant oats because they tend to break down too much.ย Steel-cut oatsย can be used, but they stay much chewier and require a longer soaking time.

Choosing Your Milk
This recipe works with almost any milk you have on hand.
Almond milkย is my go-to because it’s light and easy to find, butย whole milkย creates an extra creamy texture.ย Coconut milkย also works well if you want a richerย flavorย profile.
If you’re makingย veganย overnight oatmeal, simply choose your favorite plant-based milk.
Peanut Butter Options
Creamy peanut butterย mixes most easily into theย mixture, but crunchy peanut butter works too.
You can also substitute anotherย nut butterย if needed.ย Almond butterย is delicious in this recipe and adds a slightly differentย flavor.
For lower calorie and fat count: the secret is PB2! Have you heard of this magical peanut butter powder? Give it a try!

Sweetenerย Choices
Honeyย adds greatย flavor, butย pure maple syrupย and otherย sweetenerย options work just as well. Start with a small amount, then adjust the sweetness to your preference after the oats have chilled.
Don’t forget to let me know in the comments if you give this a try.

Amy,
What a great recipe!
Any suggestions for making this with peanut butter instead of PB2?
Hi Liberty! It’s actually a 1:1 conversion, so typically you’d use 1 cup of peanut butter. However you can be more generous with the PB2 over the peanut butter in my opinion, because of calories . . . and this recipe makes 6 servings (I need to include that). So I’d use 2 – 3 TBSP of peanut butter per serving. Probably 2 and then see how that works for ya! ๐
