Chicken Stuffing Casserole

Ingredients

  • 4 skinless and boneless chicken breasts (about 1 lb.)
  • 5 cups cubed herb seasoned stuffing
  • 6 tablespoons melted butter
  • 1 1/4 cups boiling water
  • 1 can Campbell’s Condensed Cream of Chicken soup
  • 1/3 cup milk
  • 1 tomato, sliced

Directions

Pre-heat your oven to 400ºF. Coarsely crush 1 cup of the stuffing in a bowl. Mix with 2 tablespoons crush butter and set aside.

Stuffing spread in a casserole dish

Place the remaining four cups of stuffing in a medium bowl. Stir in the remaining butter and the boiling water until the stuffing is fully coated.

Spray a 9 x 13 inch casserole dish with cooking spray. Spread the stuffing across the bottom of the dish.

Place the chicken over the top of the stuffing.

Note: for my first go at this, I used chicken breasts that were WAY too thick so it took a long time to cook! Make sure they are relatively thin or pound them out if necessary.

Stir the soup and milk together in a small bowl. Pour over the chicken.

Top with the tomato and then sprinkle with the reserved stuffing mixture.
