- 1 lb. skinless and boneless chicken breasts (4 – 5)
- 5 cups cubed herb seasoned stuffing
- 6 tablespoons melted butter
- 1 1/4 cups boiling water
- 1 can Campbell’s Condensed Cream of Chicken soup
- 1/3 cup milk
- 1 tomato, sliced

Note: for my first go at this, I used chicken breasts that were WAY too thick so it took a long time to cook! Make sure they are relatively thin or pound them out if necessary.

Chicken and Stuffing Casserole
Ingredients
- 1 lb chicken breast(s) about 4
- 5 cups cubed herb seasoned stuffing
- 6 T butter melted
- 1 1/4 cups boiling water
- 1 can Campbell's Condensed Cream of Chicken soup
- 1/3 cup milk
- 1 tomato sliced
Instructions
- Pre-heat your oven to 400ºF. Spray a casserole dish with non stick cooking spray.
- Coarsely crush 1 cup of the stuffing in a bowl. Mix with 2 tablespoons melted butter and set aside.
- Place the remaining four cups of stuffing in a medium bowl. Stir in the remaining butter and the boiling water until the stuffing is fully coated.
- Spread the stuffing across the bottom of the dish evenly.
- Place the chicken over the top of the stuffing.
- Stir the soup and milk together in a small bowl. Pour over the chicken.
- Top with the tomato and then sprinkle with the reserved stuffing mixture.
- Bake for 30 minutes or until the chicken is cooked. Remove and let cool for ten minutes before serving.
