It’s one of my favorite quick family dinner recipes and a regular part of rotation, in addition to the chicken and broccoli casserole and tater tot casserole.
Who doesn’t love a good Mexican fiesta on a plate? But if you’re anything like me, you’ve probably been there, done that with the usual taco fare.
That’s why for this dish I’m using ground turkey. Not only is it leaner than a marathon runner, but it’s also the perfect canvas for our bold, flavor-packed ingredients.
Now, I know what you’re thinking. “Another casserole? Yawn.” But hold onto your sombreros, because this isn’t your grandma’s casserole. We’re talking a fusion of condensed tomato soup, diced chilies, and mild salsa that’s like a fiesta in your mouth.
And let’s not forget the flour tortillas, layering up like a cozy Mexican blanket, and the shredded cheddar cheese that’s as melty as your heart will be after the first bite.
In under an hour, you can whip up this family-pleasing feast that’s easier to make than a paper airplane.

- 1 pound ground turkey
- 1 can Campbell’s Condensed Tomato Soup
- 1 small can diced chiles (4.5 ounces)
- 1 cup mild salsa
- 1/2 cup milk
- 6 8-inch flour tortillas cut into 1″ pieces
- 1 1/2 cups shredded cheddar cheese

Turkey Taco Casserole
Ingredients
- 1 lb ground turkey breast
- 1 can Campbell's Condensed Tomato Soup
- 4.5 oz diced green chiles 1 small can
- 1 cup mild salsa
- 1/2 cup milk
- 6 8-inch flour tortillas cut into 1" pieces
- 1 1/2 cups shredded cheddar cheese
Instructions
- Pre-heat oven to 400ºF and spray a dish with non stick cooking spray.
- In a 12-inch skillet, cook the ground turkey over medium-high heat until it's fully cooked. Stir frequently to break up the meat.
- While the turkey cooks, cut your tortilla into pieces.
- Stir in the soup, salsa, milk, diced chilies, tortillas, and 1/2 of the cheese into the skillet with the turkey. Spoon the entire mixture into an 11 x 8-inch baking dish.
- Sprinkle the remaining cheese onto your taco bake and cover with aluminum foil. Bake at 400ºF for 30 minutes or until the cheese is melted and bubbling on top.
- Pull from the oven and let cool for ten minutes before slicing and serving.
