Ingredients
- 15 Oreo cookies
- 2 (8 ounce) packages cream cheese, room temperature
- 1/2 cup sugar
- 2 eggs, room temperature
- 1 teaspoon vanilla extract
- 3/4 cup chopped Oreos (reserve a few tablespoons for topping)
Tips and tricks for this recipe:
The easiest way to cut up Oreos (in my humble opinion) is to put in a plastic bag and roll with a rolling pin or crush gently with a glass (be careful!).
Tip for baking the cheesecake: make sure the middles don’t look too wet – and give the pan a slight jiggle (wear an oven mitt). It should jiggle just a little bit or not at all. If there is noticeable movement, leave in for a few more minutes and check again.
These would be really delicious topped with whipped cream.
You can keep them in the fridge for up to five days. You’ll want to put your bite sized desserts in an airtight container with a cover so that they stay fresh.

Oreo Cheesecake Cups
Equipment
- 2 Muffin tin(s)
Ingredients
- 15 Oreos
- 16 oz cream cheese room temperature (2 packages)
- 1/2 cup granulated sugar
- 2 egg(s) at room temperature
- 1 teaspoon pure vanilla extract
- 3/4 cup Oreos chopped, reserve a few tablespoons for topping
Instructions
- Preheat the oven to 350 degrees. Line two muffin tins with 15 paper liners.
- Place one Oreo cookie into each liner.
- Break up enough Oreos to make 3/4 cup. You can use a knife on a cutting board or alternatively, a sandwich bag and rolling pin. They can be coarse.
- In a large mixing bowl, beat the cream cheese, sugar, eggs, and vanilla extract together for 2 to 3 minutes until smooth.
- Fold in the chopped Oreos (minus the reserved chopped cookies for topping) until combined.
- Using a tablespoon, spoon the cheesecake mixture into the cupcake liners, over the top of the Oreo cookie, using about 2 tablespoons of batter per cupcake liner.
- Sprinkle each cupcake with reserved chopped Oreos.
- Bake for 14 to 16 minutes or until the middle is set. Pull out of the oven and let the cheesecake bites cool for about 30 minutes. Chill in the fridge 30 minutes more if desired.
